PASTA WITH WHITE SAUCE



Mixing the sauce with the pasta is an Italian way to serve up this particular dish. It coats the pasta well, and gives you a delicious bit of sauce in every bite. You do not need to rinse your pasta.

Ingredients:
4 cups pasta (macaroni/penne/ fusilli /farfalle /ruote)
2 tbsp chopped garlic
1 tbsp cracked black pepper
3 cups milk
3 tbsp plain flour (maida)
3 tsp butter
1 tbsp dried mixed herbs
Salt to taste
1 tbsp olive oiL

10 leaves basil
Optional - 2 tbsp grated cheese (processed/cheddar)

Method
Heat butter in a pan on very low flame when it melts add maida and stir constantly for 2 mins. color of maida should not change. Now add  milk to it and  stir to a smooth paste, gradually ensuring there are no lumps. Add salt and pepper.
Cook the pasta in boiling water with some salt. Drain and set aside.
Heat the olive oil in a pan  add garlic and cook on low heat for a minute. Add basil leaves stir for a min
Add the pasta, stir, add salt to taste, add the pepper. Turn the heat off and mix white sauce.  serve hot and sprinkle the grated cheese on top if you wish.
