There was a time when corn was available only during the
rainy season, but now sweet corn is found in almost every season. Using these
we can prepare out favourite items anytime like Sweet Corn Soup, Sweet Corn
Halwa or Sweet Corn Cutlets ( Tikki Patties) which we will prepare today.
Ingredients
Sweet corn kernels - 1 cup
Potatoes - 2 boiled
Bread crumbs - crumbs of 4 bread slices (1 cup crumbs)
Lemon juice 2tsp
Vermicelli ½ cup
Salt - a little over half a teaspoon/add to taste
Ginger - 1 inch long piece (grated)
Green chillies - 1 to 2 (finely chopped)
Green coriander - 2 to 3 table spoon (finely chopped)
Black pepper - less than 1/4 teaspoon
Oil for frying
Method
Firstly, let us make a coarse powder of the sweet corn. Peel
the potatoes and mash them thoroughly. Mix mashed potatoes, sweet corn, lemon
juice, ginger, green chillies, green coriander, bread crumbs and
salt thoroughly. The
mixture is ready to make cutlets.
Take some cutlet mixture in your hand, give it an oval or
round shape.Wrap the cutlets evenly in vermicilli. Similarly make the remaining
cutlets. Sweet Corn Cutlet can be fried in oil or on a flat pan with less oil,
either way can be followed.
Shallow Fried Sweet Corn Cutlets - Heat a non-stick pan.
Pour 2-3 tsp oil in the hot pan and spread all over. Place the cutlets on the pan
to cook. Add little amounts of oil all around the cutlets. When the lower side
turns brown turn the cutlets over. Fry
the cutlets till they turn brown on both sides too. Sweet corn cutlets are
ready.
Deep Fried Sweet Corn Tikki Cutlets - Pour oil in a pan and
heat. Put 3-4 cutlets or as many fit in the pan. Fry cutlets by turning them
over from time to time till they turn brown. Similarly fry all the cutlets and
take them out.
Serve hot Sweet Corn Cutlets with green coriander chutney
and sweet chutney and enjoy the taste.
