Mumbai’s very own burger. The
vada is made of a spicy potato filling deep fried in a gram flour batter. Along
with a hot and spicy garlic chutney, it is served inside a small “Pav". My family loves it and i love to prepare it for them.
8 pav (small
squares of white bread)
1 1/2 cups boiled and mashed potatoes
2 green chillies
1 1/2 tbsp garlic grated
1 tsp rai
1/4 tsp hing
6 to 8 curry patta
1/2 tsp haldi
1 tbsp oil
3/4 cup besan
a pinch of baking soda
1/2 tsp haldi
1 tsp oil
salt to
taste
oil for deep-frying
Pound the green
chillies, ginger and garlic using a mortar and pestle.
Heat the oil and add
the mustard seeds. When they crackle, add the asafoetida and curry leaves and
sauté for a few seconds.
Add the pounded
mixture and sauté again for a few seconds.
Add the potatoes,
turmeric powder and salt and mix well.
Remove from the fire
and cool.
Divide into 8 equal
portions. Shape into rounds.
Combine all the
ingredients in a bowl and make a batter using approximately 1/3 cup of water.
Dip each round of the
vada filling into the batter and allow it to coat the mixture well .
Deep fry in hot oil, till golden brown. Drain on absorbent paper
and keep aside.
Green chutney:
9-10 strands coriander leaves
Few mint leaves (optional, I didn’t use it)
3 green chilies
1″ piece ginger (optional)
Salt
Method:
Grind all to a smooth paste. Do not make too watery.
Red chutney:
1 cup dried coconut (or dessicated coconut)
2 tbl spns chili powder
1 tea spn chopped garlic
1/4 tea spn tamarind extract or 1-2 pieces of tamarind (optional, added for
tanginess)
Salt
Method:
Dry roast coconut and tamarind till it turns slightly brownish. Grind together
with all other ingredients. This is dry powder, so do not add water. It can be
stored in air tight containers for about a month.
How to proceed
Slice each pav into
half and spread some dry garlic chutney inside.
Place one vada in
each pav and serve immediately.
pavs are small square shaped white bread rolls
which are available at local bakeries.
You can also use bread roll or slices
if the pav is not available.
