MIRCHI VADA



 Desert, sand dunes and camels are not the only beauty of the Rajasthan. Like any other regions, the royal cuisine of Rajasthan carries his own traditional and specialties. The Rajasthan cuilinary world is influenced by the harsh climate and the basic availability of ingredient. They use less water and substitute with milk, buttermilk, and ghee. Rajasthanis love to eat spicy food.

Each region is distinguished by some specialty like Mawa Kachori, Samosa and Mirchi wada of Jodhpur, Rajasthan.I love fiery food. It is a chili (Mirchi) stuffed with potato masala and coated with gram flour and deep-fried! They are often sold by street Hawkers. Even, in South , it is one of the popular snack but the stuffing is different!

Ingredients

16 Large green chilies

500 GMS. Boiled potatoes

1 tbsp. Red chili powder

1 tsp. Garam masala powder

1 tsp. Chaat masala

1 tbsp. Chopped green coriander

Salt according to taste

For the Batter:

200 gms.Gram flour

1 tsp. Baking powder

1 tsp. Red chili powder

Oil for deep frying

Salt according to taste

 Method

Slit green chilies and remove the seeds.
Mash the potatoes and add red chili powder, Garam Masala Powder, chaat masala, green coriander and salt. Mash and mix well. Divide this into equal portions.
Stuff a little of this mixture into the green chilies and also cover the chilies with this potato mixture.
Now prepare a thick batter using gram flour, baking powder, red chili powder, salt and about 1 cup of water. 
Keep the batter for about 10 minutes.
Heat oil in a Kadhai.
Dip stuffed green chilies into the gram flour batter and deep fry until golden brown.

serve hot with tea.
