
For the first time, we had honey potatoes at a chinese joint and every body in my family loved it spl. my neice. it became her fav. so i tried this for her and it was good.
Potato fingers are dipped in batter and deep fried twice to make them wonderfully crisp and crusty. just before serving they are tossed in a light, sweet and sour coating.
Ingredients:
Potatoes 2 large
Spring onions 3 white part cut finely and greens cut diagonallyinto 2" pieces
Cornflour 3 tbsp
oil 1tbsp
Soya sauce 1tsp
Red chilli sauce 1tbsp
Tomato ketchup 2tbsp
Vinegar 3/4 tbsp
Honey 2 tsp
Salt and pepper 1/2 tsp each
Batter:
Flour 1/4 cup
Cornflour 1/4 cup
Salt 1/2 tsp
Pepper 1/4 tsp
Soya sauce 1/2 tsp
Method:
Wash and peel the potatoes. cut into 1/4" wide fingers. soak them in 5 cups of cold water with 2 tsp salt and juice of one lemon for 15 mins.
Strain and wipe dry on a kitchen towel. Sprinkle 1/4 tsp pepper and 3 tbsp corn flour on them.
Make smooth batter by mixing all the batter ingredients with 5-6 tbsp of water.
Dip potato fingers in in the batter and fry till golden brown.
Heat 1 tbsp oil in a pan add white of onions, stir till light brown, add greens of onions and then add soya sauce, chilli sauce, tomato ketchup and vinegar.stir for 30 sec , add honey.
Add salt and pepper remove from fire. At the serving time , refry potatoes in hot oil and then put in the pan of sauces. Mix well for a min.on high flame. serve hot.
