TOMATO RICE



An array of flavours to amaze your senses with every spoonful, cooked rice is given a new personality. Try this new avtar as it is recommended, if you are weight conscious.
As tomato helps in weight reduction programs and is very good anti oxidant.

Ingredients:

Basmati rice 1 cup
Tomatoes 4 pureed
Onions 2-3 finly chopped
Curry patta 10 leaves
Mustard seeds 1tsp
Oil 3tbsp
Salt to taste
Turmeric powder 1/4 tsp
Red chilli powder 1 tsp
Asfoetida or heeng ½ tsp
Channa daal 1tbsp

Method:

Wash rice. boil 5-6 cups water in a large pan. Add rice. Cook till done. strain the rice. Keep aside to cool.
Heat oil in a kadhai. Add Mustard seeds & daal. Cook on very slow flame till daal changes colour. Add curry leaves and onions , fry till they are light brown.
Add tomato puree. Add huldi, chilli powder and salt. Cook on slow flame till tomatoes get dry and oil separates. Add hing. Stir.
Add boiled rice , stir carefully. Mix well. cook for 2 mins. Serve hot.
TIP:you could make it with left over cooked plain rice too.
